CARROT SEED CRISPS

 

 

 

I’m a big fan of making my own crackers, especially ones that are not only tasty but good for you as well.  There are so many combinations of flavors that you can put into a cracker that are healthy, delicious and satisfying.  And you don’t have to worry about all those extra additives and preservatives you find in supermarket crackers.   As I was searching through my cookbooks I came across a Carrot Cracker that seemed so intriguing I just had to make it.  Of course I wanted to add my own spin to it so I added lots of spices and seeds to give it that extra texture, and extra deliciousness.  I played with Chia Seeds, Poppy Seeds and Sesame Seeds which gives you good amounts of Omega 3 fatty acids, antioxidants, fiber, iron, calcium and so much more!  The combination of all the seeds, spices and carrots made it an irresistible, can’t eat just one, homemade cracker.

 

Here’s my take on a Seed Cracker and I recommend you trying it with my Cheerful Minty Pea Hummus .  It won’t do you wrong, I promise!  It is a great “go to” snack for any occasion and to top it off the kids will love these too!

Servings: 30 crisps
Ingredients
  • 1 1/2 cups Gluten Free Oats
  • 1 Medium Carrot Grated after its grated you will need to squeeze the juice out
  • 2 tbsp Sesame Seeds You can substitute with Black Sesame seeds
  • 2 tbsp Poppy Seeds
  • 1/4 cup Slivered Almonds You can substitute with Pumpkin seeds, or any other nut you'd prefer, or you can eliminate them all together
  • 1 tbsp Ground Flax Seed
  • 1 tbsp Chia Seeds
  • 1 tsp Ground Cumin
  • 1/4 tsp Red Pepper Flakes
  • 1/2 tsp Ground Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1/4 tsp Ancho Chili Powder
  • 1 tsp Kosher Salt
  • 3 tbsp Cold Water
  • 3 tbsp Grape Seed Oil You can use melted coconut oil as a substitute
Instructions
  1. Preheat oven to 350'

  2. In a food Processor pulse the Oats and Almonds until it becomes a crumb like texture

  3. Transfer the Oats and Almonds to a large mixing bowl and add the rest of the ingredients.  Mix well to combine

  4. Get two large pieces of Parchment Paper out and place the dough between the two pieces.

  5. Roll out the dough until it's flat and smooth.  Once rolled out if any pieces came apart you can just press them back together.

  6. Place the dough on the parchment paper onto a sheet tray and bake for about 25-30 minutes, checking it half way

  7. Once baked take out of the oven, let it cool for at least 20 minutes.  Then break into small pieces and serve with your favorite dip!

Recipe Notes

This dough is very VERY flaky & crumbles easily.  Be patient with it and don't worry if you see lots of crumbs.  Those just add crunchy texture later on.
