CHEERFUL MINTY PEA HUMMUS
This recipe is sooooooooooo versatile. It can be used as an appetizer at a Dinner Party. It can be used to spread on toast in the morning. It can be an afternoon snack with my Carrot Seed Crackers and it also can be a “go to” snack for kids. They LOVE this recipe because its so colorful and delicious. My son loves to dip almost anything in it including French Fries. The best part is there’s a Veggie in it, Peas! So it’s perfect for getting those veggies into our kiddos and us grown ups too!
I often love to play with different ingredients when I make hummus. Yes, the traditional way is always a winner but when I am trying to find new ways to incorporate other ingredients into a recipe to please my Picky Toddler Eater I look for ingredients that not only taste good but look pleasing as well. They do say we eat with our eyes right?
This recipe has it all, sweetness from the peas, tanginess from the fresh squeezed lemon, comfort from the chickpeas and Tahini, and the Mint just gives it that extra something special. Try it out in your kitchen, I promise you it will become a favorite!
- 16 oz Fresh or Frozen Peas
- 1 Can Chickpeas
- 2 tbsp Tahini
- 2 tbsp Good Extra Virgin Olive Oil
- 1/4 cup Juice of a Lemon You can use 1/2 or a full lemon depending on how acidic you want it. I usually use about 3/4 of a lemons juice
- 1/3 cup fresh Mint Leaves
- 1 large Garlic clove
- 1 tsp Kosher salt you can always adjust this once to your taste
- 1/2 tsp fresh ground pepper
- 1 pinch Flake Sea Salt This is for Garnish if you want
Bring a small pot water of to a boil and add the peas to it. Cook for about 2-3 minutes. This will help keep the beautiful vibrant green color
When finished drain and run under cool water to stop it from cooking more
In a Food Processor pulse the Garlic until it's finely chopped
Add the rest of the ingredients to the food processor and pulse until it is a smooth consistency. You may need to add some more oil to get the correct consistency to your taste.
Scape out the mixture using a rubber spatula from the mixing bowl and serve it up in a nice dish garnished with Flake Sea Salt, Ground Black Pepper and Extra Virgin Olive Oil. Enjoy!
This can be stored in an air tight container in your fridge for up to 4 days after making it. But I won't be surprised if it is devoured in one sitting, its that good! Its a fun alternative to the classic!
