I’m always looking to create quick and healthy snacks that I can feed myself as well as my picky eating toddler.  We have those days of snacking on cookies and gummy bears but when we both need a reset I turn to my cookbooks for inspiration.  This week I turned to the cookbook Everyday Superfoods by Jamie Oliver.

I’ve always been a huge fan of Jamie Oliver and his approach to cooking.  He takes everyday simple ingredients and turns them into healthy, delicious food that anyone can make.  I am so inspired by his dishes that I often find myself going back to his cookbooks to create recipes that become staples in my kitchen.

In his book he created these delicious little Energy Balls that are full of flavor, surprise and they satisfy all your sweet tooth cravings. They have amazing health benefits too like fighting cancer, balancing hormones and burning fat just to name a few.  In my recipe I took his same approach with ingredients, I just added a few of my own like cinnamon and coconut flakes.

Let your imagination run wild! Instead of cashews try walnuts or pecans.  And instead of the apricots try dried cranberries or dried blueberries (hmmmm that sounds good!)

This recipe is a cinch to make and most of the items should already be in your pantry.  Best of all the little ones can help make these snacks by measuring out the ingredients or better yet making the balls, what fun!

important step: toast the cashews and sesame seeds ahead of time to bring out their flavors



after you have toasted the cashews pulse 1/2 cup in a food processor until it looks like this…


then sprinkle it on plate


pulse the rest of the ingredients together until it looks like dried crumbs



add the ginger, pulse.  Then add the honey, pulse.




until it looks like this, about 1-2 minutes



Roll them into balls using your hands or a small ice cream scoop.  I use a number 60 scoop.  then roll them into the cashew dust and plate.

you can eat these right away though they will be on the more softer side.  Or you can freeze them for about 30 minutes to give them time to rest. This way you will get a nice chew out of them. enjoy!

  • 1 cup unsalted cashews
  • 1 1/2 tbsp raw sesame seeds
  • 1 cup dried apricots
  • 1 cup puffed rice cereal
  • 1 1/2 piece fresh gingerroot grated
  • 1/2 cup unsweetened coconut
  • 1/2 tsp Cinnamon
  • 3 tbsp honey
  1. In a large dry skillet toast the cashews and sesame seeds (separately) on medium heat until they turn a light golden brown. Set on a plate and let cool

  2. Pulse 1/2 cup of the cashews in a food processor until it turns into a fine dust.  Then place on a plate and set aside

  3. Place the remaining cashews, sesame seeds, apricots, cinnamon, puffed rice cereal and coconut into the food processor and pulse until finely chopped

  4. Peel and finely grate in the ginger and pulse again until finely ground, then add the honey.  Pulse for another 1-2 minutes, stopping to scrape down the sides.

  5. With a small ice cream scoop or wet hands, scoop out the balls and drop them into the ground cashew dust and roll them around until they are all coated.  Plate and enjoy!

Recipe Notes

After you roll out the balls you can eat them right away or, freeze them for about 30 minutes to give them a rest.  This will create a nice chew later on.

These energy balls can be stored in an air tight container for up to two weeks
