sun dried tomatoes & roasted red pepper spread with spiced pita chips
I’m a huge fan of dips and spreads.
There’s something to be said about blending flavorful ingredients in a food processor and then being able to enjoy the outcome of some delicious and comforting food that can be shared with family, friends and even little ones. I like making them using my own pantry ingredients so I can adjust the seasonings to my liking. Don’t get me wrong, when I’m in a pinch (which is most days) I’ll buy the store bought brands like Sabra , or a my new favorite Cava Hummus, which you can find at Whole Foods. They are great to have on hand for instant healthy snacking or to have as a dip or sauce with a favorite dinner dish that the whole family can enjoy. When I do have some time and I feel like going through my pantry and whipping out some ingredients, I usually can get away with a pretty tasty spread. So thats exactly what I did. I had a left over jar of roasted red peppers, 1/2 a jar of sun dried tomatoes, tahini, garlic, olive oil, a lemon and of course one of my favorite pantry staples, garbanzo beans. So I whipped it all up in a food processor for a couple minutes and just like that a delicious, healthy spread was created. I always have whole wheat pita on hand too so I made my spicy pita chips to go with it. This flavorful dip is so delicious that even my picky eating toddler can’t keep his hands away from it which is always a plus in my book! Try it for yourself I promise your food processor won’t do you wrong, just remember to always taste for seasoning.
Sun dried tomatoes
These flavorful oil packed sun dried tomatoes are a staple in my kitchen. They add so much flavor to so many of my dishes including this spread.
SUN DRIED TOMATO FLAKES
You can find these flakes in specialty food stores, online or I found them at Williams Sonoma. They go great with this spread as a garnish. It gives an extra flavor boost and a crunchy texture. If you can’t find this you can always garnish with cracked black pepper or fresh parsley.
- 1 can chick peas
- 1/2 cup tahini
- 1/4 tsp ground cumin
- 1/2 cup sun dried tomatoes in jar with oil
- 1 cup roasted red peppers in jar
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh squeezed lemon juice
- 1 tsp kosher salt
- 1/2 tsp pepper
- sprinkle of paprika and sun dried tomato flakes for garnish
Combine all the ingredients in a food processor and blend for a couple minutes until smooth and consistent. You may need to add some extra olive oil or lemon juice to thin it out. Taste for seasoning and add more spice if you need.
Plate in a serving dish and garnish with sun dried tomato flakes, paprika and a drizzle of good olive oil, enjoy!
SPICED PITA CHIPS
- 4 whole wheat pita bread
- 2 tbsp extra virgin olive oil
- 1 tbsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground garlic
- 1/2 tsp ground onion powder
- 1/2 tsp kosher salt
- 1 tsp ground paprika
- 1/4 tsp chili powder
Preheat oven to 375
Cut the Pita bread into triangles and put in a bowl, set aside
Combine the spices and olive oil together in a bowl and drizzle onto the pita chips. Toss so all the chips are coated with the seasoning
On a large baking sheet covered with parchment paper lay the chips down so they are not touching one another. Put in the oven and bake for 15-20 minutes until they are crisp.
Plate and enjoy!
